Weeknight White Bean & Greens Skillet
A pantry dinner that leans on canned beans and whatever greens are wilting in the drawer. Mashing a quarter of the beans is what gives it a sauce.
Warm the oil in a large skillet over medium. Cook the garlic and red pepper flakes until pale gold, about 2 minutes.
timer 2 minAdd the beans and broth. Mash about a quarter of the beans against the pan to thicken, then simmer 5 minutes.
timer 5 minStir in the kale a handful at a time until tender but still bright, 4 to 5 minutes.
timer 5 minOff the heat, stir in the lemon juice, salt, and pepper. Taste and adjust.
Pile onto the toasted bread and finish with Parmesan, if using.
